Food on the Run

College students rarely have time--or the kitchen space--to cook a full meal from scratch. But cafeterias and fast food aren’t the only alternatives. Here are a few suggestions:

RAMEN ON THE RUN

Prepare 1 package of ramen noodles with seasoning as directed on package, boiling about 3 minutes. Drain off liquid and toss noodles with any of following: cooked shrimp, leftover cooked chicken or beef, cut-up vegetables from salad bar, chunks of cheese. Add prepared pasta sauce, soy sauce or oil and vinegar salad dressing for seasoning, if desired.

QUICK CHICK

Take 1 boneless, already marinated chicken breast (available in most supermarket meat departments). Broil, according to package directions, about 6 minutes per side. Slice on diagonal into long, thin slices and add to rice or pasta; or roll up in tortilla with salsa. Chicken can also be arranged on top of assorted salad greens and cut-up, salad-bar vegetables.

MEXICAN PIZZA (a k a TOSTADAS)

Take 1 tortilla, either corn or flour. Top with shredded Cheddar or Jack cheese, chopped tomatoes, beans (use refried or even garbanzo beans from salad bar) and olives. Place on baking sheet under broiler or in hot oven and heat until cheese melts. Add salsa and shredded lettuce.
