Doing right by the R-word

RATATOUILLE was given a bum rap in “Don’t Say That R-Word” by Regina Schrambling (Sept. 7).
When properly prepared by sauteing each vegetable separately in olive oil and allowing them to gently cook a short time with some white wine and a generous pinch of herbes de Provence, wonderful flavors and beautiful colors emerge.
The result is a far cry from the vegetables being braised to “indistinguishable softness.”
